Our Homemade Graham Cracker Crust

Graham Cracker Crust, one 9” crust
Ingredients:

1 cup + 2 Tbsp Graham Crumbs (6 oz), 1/2 tsp kosher salt, 5 Tbsp butter, melted (4.5 oz), 2 Tbsp sugar (.9 oz)

Instructions:

Mix graham cracker crumbs & salt. Hold. Whisk melted butter and sugar until smooth. Add dry ingredients and mix until smooth. Spread mixture into a buttered 9" pan and press down evenly. Bake for 10-12 minutes at 325º. Cool.

Mascarpone Cream Pie

Seasonal Mascarpone Pie 9” - uses 1 homemade crust (above)
Ingredients:

1 1/4 cup whipping cream, 8 oz mascarpone, 2/3 cup sugar, 1 tsp vanilla extract. Topping: 5 oz of your favorite seasonal jam OR Chocolate, Butterscotch or Caramel sauce.

Instructions:

Whip cream with 1/3 cup sugar until firm peaks form. In a separate bowl, cream mascarpone, vanilla and 1/3 cup sugar. Combine mascarpone and cream mixes. Spread filling into pie crust. Whisk jam to soften it and spread on top of the pie. Refrigerate overnight. Variations for Filling: 1) Substitute almond extract for vanilla extract. Add sliced almonds on top. 2) Substitute 2 TBSP of your favorite liquor for Vanilla Extract.

Graham Cracker Coconut Chocolate Chip Muffins

Moist muffins topped with coconut graham cracker crumble. 12 muffins.
Ingredients:

Muffin: 2 cups graham crumbs 1 1/2 cups flour 1 Tbsp baking powder 1/2 tsp salt 1/2 cup light brown sugar 1 tsp cinnamon 1 cup milk 1/2 cup coconut oil 1 egg 2 tsp vanilla extract 1 cup mini chocolate chips. Crumble: 1/4 cup flour 1/4 cup light brown sugar 1/3 cup graham crumbs 1/2 tsp cinnamon 3 TBSP unsweetened shredded coconut 1/4 cup softened butter

Instructions:

Crumble: Mix all dry ingredients, then mix with butter until crumbly. Muffin: Mix graham crumbs, flour, baking powder, salt, cinnamon and brown sugar. Hold. In a mixer on medium speed combine milk, coconut oil, egg and vanilla extract. On low speed, add dry ingredients to wet and mix until just incorporated. Add chocolate chips and mix in on low speed (about 30 seconds). Scoop mix into greased muffin pan. Sprinkle crumble over the top of the muffins. Bake at 425 for 5 minutes, then lower heat to 375 for 15 minutes

Chocolate Chip Graham Cracker Cookies / Bars

The cookies are more crunchy, The bars are softer. Cut the bars after they have cooled.
Ingredients:

12 TBSP butter softened (1 ½ sticks) ¼ cup sugar ¼ cup brown sugar 1 egg 1 tsp vanilla extract ½ cup flour 1 ¾ cup graham crumbs ½ tsp salt ½ tsp baking soda 1 tsp cinnamon 1 cup chocolate chips

Instructions:

Mix graham crumbs, flour, salt, baking soda and cinnamon. Hold. Cream the butter and sugars on medium speed. Add the egg and extract to the butter and mix in on low speed. Add dry ingredients to the wet. Mix on low speed until just incorporated. Add chocolate chips and mix in for 15-20 seconds on low speed. Bake at 350 degrees 10-12 minutes for cookies, 30-32 minutes for bars. For a single recipe of bars, use a 13x9 pan. A double recipe fits in a half sheet pan (18x13).
